I saw a recipe for honey joys a couple days ago on the blog eat.live.travel.write and yesterday I made sure to get some corn flakes to create my own variation of this treat. I've been wanting to make a special treat for Christian. The dude is a none stop grant proposal writing machine. It's exhausting to see him work. I made the recipe using only honey, no sugar, and it's seriously sweet (in a good way).
I broke the honey joys into small bite size pieces and packaged it in little boxes for him to keep on his desk. That way when he has a craving he can open up a box and enjoy. I had every intention of writing him a love note to accompany the honey bites but by the time I got to it baby Maria was clawing my face trying to escape the baby carrier and Enzo was having a melt down because I made him eat 4 peas for dinner.

The good news is that I saved some honey bites for myself. I call it consolation prize.
Honey Bites
- 1/2 cup butter
- 1/3 cup honey
- 4 cups corn flakes
- preheat oven to 300*
- melt butter and honey until frothy
- add corn flakes and mix well
- lay mixture on a cookie sheet (I used a silpat so it wouldn't stick)
- bake for 10 minutes
- let cool completely before breaking it into bite sized pieces.
